Keto dinner with Chicken

Chicken is one of our favorite food and we love to make different recipes out of it. Here we are sharing our all-time favorite baked chicken breasts stuffed with spinach and our favorite cream cheese.

Cream cheese and spinach stuffed chicken breasts:

These cheese and spinach stuffed chicken breasts make an amazing low-carb and keto-friendly dinner. We love to serve this creamy chicken with caramelized onion and mushrooms. This healthy keto dinner takes just 30 minutes to cook but every bite is worth it. So let's dig into the recipe without further a due.

  • 4 chicken breasts skinless
  • 4 cups spinach
  • 1 onion sliced
  • 8 ounces baby Bella mushrooms
  • 2 ounces cream cheese
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon fresh thyme
  • 1 tablespoon balsamic vinegar
  • Freshly ground black pepper to taste
  • Salt to taste



  1. Preheat oven to 375 degrees.
  2. Cut 6 slits into the top of each breast with a sharp knife. Drizzle each chicken breast with a little bit of olive oil and season with salt and pepper.
  3. Place a large skillet (ovenproof) over medium-high heat and add half a tablespoon of olive oil.
  4. Add spinach into the skillet and season with garlic powder and cook until leaves get wilted.
  5. Transfer cooked spinach to a medium bowl and add in cream cheese and mix.
  6. Stuff each slit with a spinach cheese mixture.
  7. Add a tablespoon of olive oil in the same skillet then add in sliced onion, mushrooms, balsamic vinegar, thyme, salt, and pepper.
  8. Saute until onion gets caramelized and mushrooms color changes into brown. Make room for chicken breasts by moving onion and mushrooms into the sides of the skillet.
  9. Add chicken pieces into the skillet then transfer to the oven and bake for 20-30 minutes.

And the lip-smacking, juicy and tender chicken is ready to kill your hunger.
